What you need:

  • 1 medium eggplant, sliced into 1/2-inch rounds
  • 3 medium Portobello mushroom caps, gills removed
  • 1 large tomato, sliced
  • 1 small clove garlic, chopped and mashed
  • 2 cups chopped spinach
  • 1/4 cup low-fat mayonnaise
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon salt

  • 2 tablespoons canola oil, divided
  • 2 teaspoons finely grated ginger, divided
  • 2 teaspoons minced seeded jalapeno, divided
